Apple Cranberry Crumble Protein Bars

  • Makes 9 servings

INGREDIENTS

  • 1 ½ cups apple cranberry muesli blended into a fine flour
  • â…“ cup ZEGO protein powder
  • ½ cup unsweetened apple sauce
  • ¼ cup tahini (can sub sunflower seed butter)
  • ¼ cup pure maple syrup
  • ¼ cup water
  • Pinch of salt

CRUMBLE TOPPING

  • â…“ cup muesli + â…“ cup blended muesli (flour)
  • 1 tbsp ZEGO protein powder
  • 2 tbsp pure maple syrup

DIRECTIONS

  • Preheat the oven to 350 degrees and line a loaf pan with some parchment paper
  • Add 1 ½ cups of muesli in a high-speed blender and blend into fine flour
  • In a large bowl, add the apple sauce, maple syrup, tahini, water, and pinch of salt.
  • Combine well until smooth.
  • Add in the muesli flour and protein powder. Mix well until a smooth batter forms. Pour the batter into the parchment-lined loaf pan
  • In a small bowl, make the crumble by adding â…“ cup of whole muesli and â…“ cup of muesli flour, protein powder, and maple syrup. Mix everything together well and then spread the crumble over the top of the muesli bars.
  • Bake at 350 for 20 minutes and then cover the top with parchment paper and bake for another 10 minutes.
  • Let cool completely, cut into bars, and enjoy!
